Dalrymple is a 10-year-old teaspooned malt originating from Ailsa Bay Distillery, built by William Grant & Sons at Girvan. Distilled in 2015 and matured in a bourbon barrel, it offers a bright, clean and fruity character with notes of vanilla, honey and soft oak spice. The addition of a tiny amount of another single malt means it cannot be labelled as an Ailsa Bay single malt, while remaining essentially whisky from the original distillery. Bottled at 43% ABV in a 500ml format, it is fresh, elegant and beautifully balanced.
Strathenry is the unpeated single malt from Inchdairnie Distillery, a modern Lowland distillery founded in 2015 and known for its precise, innovative approach to whisky production. Distilled in 2018 and matured for 7 years in a first fill bourbon barrel, this release shows a bright, fruity and malty character with vanilla sweetness and gentle oak. Bottled at 43% ABV in a 500ml format, it is a fresh, approachable and fruit-forward single malt.
Distilled in 2009 at the now-closed Port Dundas Distillery, this 16-year-old Single Grain Scotch Whisky matured in a single hogshead cask. Port Dundas was once one of Scotland’s largest grain distilleries and a major supplier to blended Scotch before closing in 2010. Matured for 16 years, this release offers a classic grain whisky profile of sweetness, soft oak and creamy texture, balanced by a lively, fresh character. Bottled at 50.4% ABV in a 500ml format.

The Distilleries Behind Your Collection
Port Dundas Distillery
Founded in Glasgow in 1811 beside the Forth & Clyde Canal, Port Dundas grew into one of Scotland’s most important grain distilleries and by the 1880s was the country’s largest. Using Coffey and pot stills, it produced whisky from corn, barley and rye, while the vast site also absorbed neighbouring Cowlairs and Dundashill. Despite major fires in 1903 and 1916, it repeatedly rebuilt and modernised. Production finally ended in 2011 when Diageo shifted grain whisky production to Cameronbridge, and the landmark site was demolished.
Inchdairnie Distillery
Founded by industry veteran Ian Palmer, InchDairnie began distilling in Fife in December 2015 after an 18-month build. Designed as a modern, highly efficient Lowland distillery, it uses seasonal barley, bespoke yeasts, a hammer mill and mash filter to create a light, floral and aromatic spirit. Built with experimentation in mind, it also features an unusual Lomond still and advanced condensers. Its whisky is designed to reflect the seasons, with the distillery combining innovation, flavour and precision from the outset.
Ailsa Bay Distillery
Built by William Grant & Sons in 2007 on the Girvan site once home to Ladyburn, Ailsa Bay was created to relieve pressure on Balvenie and supply malt for Grant’s blends. Designed for flexibility, it can produce several spirit styles, from fruity and nutty to heavily peated. Its first official single malt appeared in 2016, showcasing an experimental approach to cut points, maturation and even sweetness measurement. Today, Ailsa Bay remains a modern Lowland distillery known for innovation, versatility and precision.
